Glazed panetton

Another legend again but this time tells of Sister Ughetta, the cook of a poor convent, who decided to join the few remaining ingredients in the monastery kitchen to give her fellow sisters a a little ‘happier’ Christmas.

She took the bread dough and added eggs and sugar. In a shelf she found a little of candied fruits and raisins. To bless the Christmas bread she drew over a cross with a knife. The nuns were enthusiastic about the surprise and soon the news spread all over Milan.

Ingredients: plain flour, raisins, oranges, butter, sugar, egg yolk, powdered mother yeast, wheat gluten, emulsifier E471, brewer’s yeast, salt, non-fat dry milk, flavours.
FROSTING: sugar, albumen, rice flour, armellina almonds, modified starch, flavours.
DECORATION:  sanding sugar, almonds (2% of the finished products as minimum quantity).
