Fennel seed taralli are a typical specialty of Puglia that accompanies a quick snack in the mid-morning, or before a dinner made of genuine and traditional dishes. Maybe you can associate them to the local dried sausage and to home-grown lemon green olives.
The smaller salted tarallini are made with a simple dough of flour, yeast, oil, salt and fennel seeds; from the soft dough cords in the shape of a donut are then formed and left to leaven. Taralli are first cooked in boiling water and later put in the oven.
